Many species of fungi now bring forth their fruit bodies, which can enrich the diet. For consumption without regret, consumers should consider some details.
Mushrooms should always be fresh and processed quickly after purchase. To detect the freshness in the typical light and pleasant mushroom flavor. Smell musty or pungent plants, however, they are not in the shopping basket, or on the plate. Moreover, the freshness to recognize the fact that the mushrooms are firm and not soft and wrinkled – at least this should apply to the species that have normally tight and smooth hats. The intersection of many fungal species is also to be read whether they are fresh: brown edges suggest that the harvest back is usually a bit longer, bright edges, however, are a sign of freshness.
Because some people, mushrooms are hard to digest in the digestive and preparation can entblähende spices are used. Some caraway or fennel seeds as a condiment thus ensure a remedy. In addition, thorough chewing is important, it supports easier digestion. Although it has been advised earlier, mushroom dishes to warm up, this is the right preparation and approach still possible. After preparation, the mushrooms are cooled rapidly, then they are in the refrigerator for two to four degrees Celsius maximum store one day. When heated warm-up, the court must at a minimum temperature of 70 degrees.
Who would even pick mushrooms in the forest can best exercise the greatest caution. The safest way is to be accompanied by an expert, so do not end up accidentally poisonous mushrooms on the plate. The scientific literature should leave inexperienced mushroom pickers, because the pictures or drawings may differ significantly from those on the fungi. Ate traces of fungi are not a sure sign that it is non-toxic species. The Council also is doubtful that poisonous mushrooms are cooked with onions or discolor the silver spoons. Discoloration does not say anything about the possible toxicity.
Another important aspect is the radioactive contamination of some fungi. The reactor disaster of 26 April 1986 at Chernobyl, Russia has still to this day. Mushrooms from this region and from Eastern Europe can have high stress. Recently, the Environment Institute Munich for a sample at the Munich Trade radioactively contaminated mushrooms discovered that appeared to have come from Eastern Europe to Germany. Precaution, consumers should avoid, therefore edible mushrooms from eastern parts of our continent, or only eat very small amounts.
